For my money, Izzy was the heart of that band -- between him and Steven Adler, they created that shambling groove that gave AFD so much of its charm. SCoM is a damned good song, but stuff like "It's So Easy" or "You're Crazy" were for me the backbone of that album -- just simple raunch played at high volume with plenty of grease in the groove.
After Izzy and Steve left the band -- hell, even before -- they settled down into a staid four-on-the-floor hard rock band, to my ears -- no funk, no soul, just loud guitars and louder drums.
I don't know if we can really say GnR was a soul/funk band, even though they have influences from many genres - Noticeably Axl Rose mentioned Aerosmith as a major influence and it's not surprising.
Yes, SCoM is a great song, it's just that I overplayed it so much I don't enjoy it as much as I used to - But this depends on my mood - Paradise city was the song that got me into GnR and I still love it to this day. I think the band gave amazing performances - During my GnR phase I watched a lot of live concerts on youtube and the overall chemistry of the band and Axl Rose's stage persona were great - Except when he decided to behave like an idiot, hit people, leave the concert for stupid reasons and arrive late (almost everytime from what people tell me).
I also like their cover of Knocking on Heaven's Door - It's a more rockish/heavier version
