The way I like to think of it is that God is absolute perfection, greatness, glory, and beauty. In being perfect he also must be utmost loving, and utmost loving would be utmost only if it's ultimate existence/life. God has perfect qualities, being perfect in wisdom, in morality, in intelligence.
Now we aren't perfect like God, but his qualities and glory and beauty exist in all of us to a degree.
And something is that we don't all have the exact image of God, it's more like, in decent there is different types of glory, beauty, etc, and our personalities are all unique but yet there is unifying factor that makes us human and also less or more similar to others.
There is a divine piece of divine glory and beauty in every soul, and so in that sense, it can be said we are created from his image.
Although it is true people have made God what they want, like Min said, the same can be said about morals. People often decide morals to be what they want, it doesn't mean there is no knowledge of morals just because that has happened.
The same is true of God. Just because people have made up a certain image of him, doesn't mean he is completely made up, similarly to how morality is not completely made up, even though if much of it is wrong in a culture/person.
