No, prawns are not insects. Trilobites did not evolve into shrimps or crayfishes.
Prawns, insects, and trilobites exemplify 3 of the 5 great branches of the Arthropods family. The 4th and 5th branches are examplified by millipedes and spiders respectively.
Although arthropods from different branches often share many characteristics, and may seem similar across branches while the distinction between branches may seem subtle and technical, these distinctions that distinguish one branch from another in fact reflect fundamental differences during earliest developments of embryo between members on different branches. these embryonic difference in turn reflect very long history of separate evolution. It is estimated the 5 branches of arthropod family last shared a common ancester at least 540 million years ago.

Not sure where I read about Prawns being insects, but I did read it. Can't remember where or when, so my claim by itself may be taken as hearsay.
Today I went looking, Googling "'are prawns insects?"
Found this after a quick search:
