Even for those that believe in some afterlife, the body is done.
As I understand it, there are laws for the proper disposal of the body, so, cannibalism is not illegal and just not considered in most cases.
Once a body made it through the American food processing system it would be pristine, sterile, nutritionless, salmonella food.
