Rather than google it, I'll try to think through it on my own. . . more fun that way.
I've played Mundo and here's what I remember:
1) All his skills use health.
2) If his cleaver hits, he gets back a lot of the health cost (and it DOES cost a big chunk of health to cast it).
3) The super-regen is his ult, so he won't have it until lvl 6.
4) He doesn't really do that much damage early game if he can't land his Q.
It seems to me you'd want to stay on your toes and dance back and forth, and then bum rush him when he misses his cleaver.
If he hasn't backed before lvl 6, he'll probably be out of potions and waiting for his ult to come up. Expecting this, I think if you drop Ignite on him as soon as you see that regen starting, he should fail his trade and go packing, while you can hopefully Q your way back up to decent health while he's back and clear a couple minions waves before you back yourself.
