It does demonstrably lose a lot of its flavor. All of the juice that contains so much of it is evaporated. Sure, it doesn't taste like nothing, but it doesn't have as much flavor as a rare/med-rare steak. That said, I completely agree with you otherwise. People have to eat food the way they like it. I said as much before.
I have a vegetarian sister who can't stand anything with extra flavor. For instance, goldfish has a line with added flavoring. She can't stand it. She prefers the ones I find bland. Perhaps people who prefer well done steak are the same way. Or it's the texture of a rarer steak that throws them off. For my aunt, she thinks it's still bleeding.
The evaporation part I'd agree with, but it most certainly has taste to me well done. I like the crispy flavor of the grill marks and fat. I have never liked runny meat. I can tolerate it if someone gives me leftovers because I love steak sauce or even ranch, with hot sauce and pepper. It doesn't lose flavor to me. Even without sauce, I'd still take a plain steak well done over a runny rare steak any day.
There is no right or wrong way to eat food. Nobody else is going to eat it for you.
