That's because the present Bible/Torah was/is corrupted, both according to the Qur'an and according to christian scholars. So if the prophet PBUH's name isn't there -a disputed thesis- it can be chalked up to an alteration of the original scripture. Puzzle solved.
The verse did say that it exists in the current OT we have; corrupted or not:
