Well, good news: I finally got the State of Illinois to accept my tax return on the fourth try. Apparently, it was all down to a middle initial. How silly of me to think that when a form asks for me to give my middle name, they actually wanted the actual middle name and not just an initial.
You know, I wonder if they could still get you on tax evasion if you sent the IRS your tax form over a dozen times, and they kept rejecting them all the way to April 15th and didn't explain exactly what needed to be changed and not just pointed you in the general area of where the problem is.

Gulping down a cupful of strawberry applesauce. When I woke this morning, my mouth tasted like I'd been drinking coffee for some time, yet I hadn't even started. That being the case, it certainly hasn't stopped me from proceeding to drink more coffee.

Relaxing. I just made kimchi and rice, using my new microwave rice cooker for the first time, and cooking real rice for probably the first time in decades.
I need to cut up two heads of lettuce and a head of cabbage, but I'll probably defer on that until after I go to the gym for a swim later. I've also got to do dishes and take out the garbage. I'll likely not get home before 9:30 or 10:00, so it's going to be a busy evening.
I generously sowed the kitchen floor with popcorn kernels earlier today and I'm still finding kernels that I missed. With my feet. Not exactly a "stepped on a Lego" moment but not a whole lot different either.

I know it's not easy to chop things up for you, but I was wondering whether you had ever used a mandolin slicer?
Perhaps it could be superglued to a cutting board and then have a wet cloth placed under the board to stop it from slipping.
Or you could purchase a robo coupe blender, cut up the cabbage into quarters and just pulse it.
Also, I'm curious as to what you mean by real rice. :-)

By real rice I mean something other than instant rice or the microwave rice pouches that I've been using for the last two years.
No, I have not tried a mandolin slicer. If my google search is any indication, a mandolin slicer would cut the lettuce too fine for my tastes. I have requested that insurance pay for the device pictured below, but it may not be necessary. Two weeks ago, my ILS worker and I ran out of time, and she usually does it. So I cut it up myself and it was surprisingly easy. I used a chef's knife for the main work, and a 7" Santoku to cut out the hearts, and it was basically a no-brainer. The only part I had difficulty with was transferring the cut lettuce from my cutting board to the plastic container that I store it in. I wasn't sufficiently patient on the first transfer and succeeded in spilling a good deal of lettuce on the counter and the floor.
