What the NT is is various individuals recording history. And they all agree the 12 Apostles believed they saw Jesus alive from the dead in various groups.
What better evidence could you ask for?
I ask for evidence independent of the claim. The Bible is the claim. The Bible was written by different people, but at different times, and there is evidence that a lot of the gospels derive from one document.
Several people agree that Ancient Greeks believed in Zeus. Does that make Zeus real? No. Just because people agree on a belief, the belief does not become real.

What sort of evidence do you think would deem independent of the claim?
Evidence that is not scripture (unless that scripture has nothing whatsoever to do with christianity). Preferably also not verbal tradition or someone writing down what some other bloke told them.

An example could be the gecentric model of the universe. A lot of groups belived this, then observation (evidence) that anybody with the knowhow could verify, for themselves, proved it incorrect. That is an example of evidence. It doesn't rely on subjectivity and can be verified by anybody. That is better evidence then a group of individuals agreeing on something and making the claim that their agreement is proof of the truth of that which they agreed on.

Gen. 1.1 allows for the big bang and Gen. 2.7 which says the body is from dust (even the dust of the stars).
