What's the answer? And, also, provide an explanation for how one arrives at it.

Negative 20?
7-7 is zero and subtracting anything after that would bring one into the negative range, correct?

But there's no = in the end, so the - is probably not a minus sign

Yes, that's just a dash! No minus signs.

Just to be clear, by answer you mean the next number in the sequence and you'd like the method for producing the sequence?

How about a mirror image of the amount of letters in each number 7(5)-7(5)-5(4)-1(3)-and now the mirror-2(3)-4(4)-8(5)-given the options-7 or 3. No, you wouldn't give two options as the right answer.
I can't remember where this verse is from, I think it got removed from canon:
