Depends on whether we are talking emotional ease or intellectual ease (overall plausibility).

Intellectual ease doesn't seem to have much to do with plausibility.  Lots of things in science are intellectually difficult (or even counter-intuitive).  They may not be plausible, but they turn out to be true.

From my limited experience Catholic priests seem to accept without question the theory of evolution.

I can't remember where this verse is from, I think it got removed from canon:
