Isn't the "big chill" the most probable theory to date?
In layman terms, dark energy increases at a consistent rate instead of an exponential rate. The universe continues to expand forever. Eventually all star formation will cease, and the only thing left in the universe will be black holes and red dwarfs. Eventually black holes will evaporate via Hawking radiation leaving nothing but unbound photons.
At least if I understand it correctly. The good new is that the time scales are truly enormous. 100's of trillions of years.

I figured I would stop around the 100 trillion year mark
One thing I find oddly reassuring is that the most abundant stars in the universe, red dwarfs, can have lifespans in the trillions of years due to their slow use of nuclear fuel. You can almost imagine some advanced civilization building a dyson sphere or ringworld around one and being able to survive a very long time.
