I'd load up the car with all my musical instruments, a few hand tools, basic medical supplies, a can opener and a gas siphon and head south to warmer climes. I'd look for a fairly large city with a good library and some museums, start a garden, and just do stuff -- Read, draw, play music, stargaze, and perhaps keep a diary and chronicle what I was able to find out about the extinction event. (Originally my plan was to free as many animals as I could, but I see from re-reading the OP that they disappeared, too.)

It's a mystery. Did something happen to YOU, or did something happen to EVERYONE ELSE ??

In a case of not having to worry about food or health I'd live to purely entertain myself.
It would probably be better to be an American because of more land mass I could cover and easier access to weapons. I'd really just want to drive cars very fast and blow things up with guns and weapons.
That and take lots of drugs, cocaine, heroin, ecstasy. There'd be no women to look good for so bring on the KFC, donuts, pizza and popcorn.
I think insanity would set in at some point though. Loneliness is a weird thing to me, in work after a few night shifts I crave people, then after a week of day shifts and if I deal with a lot of people I crave the night time solitude again. But having experienced both constantly in close succession to one another I really notice how being around other people or being alone affects the body on every level.
The chemicals like adrenaline rushes, testosterone, all of those kinds of things you get around other people. When I'm on my own of a night time it's a different kind of set up, I get adrenaline just because I'm in caveman mode, it's dark, I'm alone and every noise or sighting puts me on edge.
I think partly it would be difficult to predict just how much it would affect you to be lonely to the extent there's not another human on earth, but to make a vague prediction I think I could last a few years blowing shit up and driving fast cars, reading books and watching films. It might all feel a bit pointless and futile after a month or so though. Maybe the mind would refuse to accept there is no one else and wait for aliens to come down or something.

I might go on an expedition. Is the world I'm on the real earth, or a clever (or maybe not so clever) copy ?
I could go check a couple apartments I formerly lived in. On the top edge of a bedroom door in one, I wrote something. Even after 40 years, it's probably still there. Another apartment had a dry wall repair in a certain place. I could go cut out the drywall and see if the is a patch there.
Be fun to go see. And maybe find out something.

I suspect this. Delusion both paranoid and grandiose. Followed by hallucination. And then complete madness including paranoid night terrors and hearing voices constantly.
Basically I think in a pathological situation pathology becomes the norm.

Assuming that humanity's knowledge is still present in libraries/computer databases and I possessed exceptional intelligence/creativity along with artistic, scientific, mathematical, and technological talents, I would probably become some type of renaissance man and live out the rest of my years enveloped in a world of ideas and learning everything that I could. Armed with such talents and knowledge, perhaps I would be able to construct sentient lifeforms and build a new kind of society.

If all animal life is gone, garden's a waste of tmie. No pollinators.
