In the fifth plague, it does say "And on the next day the Lord did so; all the livestock of the Egyptians died." (Exodus 9:6)
Then, in the tenth plague, god kills them again
At midnight, the Lord struck down all the firstborn in Egypt, from the firstborn of Pharaoh, who sat on the throne, to the firstborn of the prisoner, who was in the dungeon, and the firstborn of all the livestock as well. (Exodus 12:29)
The only time animals get a break in the Old Testament is when they are counted as war booty remaining after the humans were slaughtered:
We completely destroyed them, as we had done with Sihon king of Heshbon, destroying every city—men, women and children. But all the livestock and the plunder from their cities we carried off for ourselves. (Deuteronomy 3:6–7)

Exodus 9:6 ‘…but not one animal of the Israelis died.’
Exodus 12:29 Clearly, the Egyptian confiscated the livestock left to the Israelis, but God didn’t fall for it.
