The Ubermensch and justice
Does an Ubermensch allow the law (rules created by other men) to punish his wrongdoer, or does he takes justice in his own hands (aka revenge)? What would an Ubermensch do?

The setup already throws that out of the window. The person is facing a loss of control over the circumstances of their own life. To resort to taking revenge outside of the law, even, is a demonstration that they aren't in control of those circumstances. A true ubermensch has already subverted the law to accord with their own will and interests. They need do nothing beyond watch the other ground to dust by the gears of the machine.

Then again, it could be argued that a true ubermensch would understand that s/he is a part of a greater whole (albeit an important and necessary part) and that the needs of a social structure are greater than the needs of an individual, and would allow the law to take its course. 

Too many people think ubermensch is the equivalent of a narcissistic psychopath, which us not what Nietzsche had in mind.

He kinda does, since he more or less invented the concept (Goethe notwithstanding). ‘Ubermensch’ is as intrinsic Nietzsche’ philosophy as Platonic forms are to Plato’s.

Yes, well Nietzsche took great care to flesh out his concept of the Ubermensch whereas you are just tossing to word around.
