OK, a few things to ask yourself when watching any debate.
1. Who has organised and funded the debate.
2. Who is chairing the debate.
3. Is it edited, and if so who is organising the editing.
4. What are the biases if any of those mentioned above.
I'd lastly like to mention that Dawkins is by proffession an evolutionary biologist so can only really argue science with proficiency in that area, not sure about Hitchins, so when drawn into any other area of science he is outside his comfort zone.
I'm sure others can add plenty more things to watch out for and consider.
