I think it's to help people realize how it feels to be poor, hungry and thirsty.
I like to think I'm playing my part by eating food and drinking ice cold drinks (slowly with lots of mmmmmmm noises) in front of the Muslims in work as much as possible. It makes the experience more real.
A weird fact I learned from freakonomics involved a lot of deaf children being born in a particular month in Islamic countries, it's because the mothers were fasting during pregnancy resulting in a surge of deaf babies.

Ramadan is easier in the southern hemisphere, shorter daylight duration . . .

It's not about food, drinks, celebration and feasting. It's about tasting hunger and get closer to God.

In Ramadan, one should fast from dawn to sunset. Never eating or drinking except after sunset.
God is always near. He always sees and hears.
Does he watch Alaskan Muslims die of thirst or does he watch them board a plane and fly south for the summer? An enquiring mind needs to know.
It's amazing 'science' always seems to 'find' whatever it is funded for, and never the oppsite. Drich.
