I always like those holiday packs with 15 or 20 different cheeses. It gives one an opportunity to experiment without buying a whole wheel.

I stand corrected. Mold is sometimes used in the making of cheese. Not usually in the production of hard cheeses though and usually only as a rind, not spread throughout the cheese.
Still, it's not that nasty, overpowering shit that's in blue cheese.
