Enzymes, not mold are used in the making of cheese.

The unique look of blue cheese is a result of a specific type of mold added during the cheesemaking process and an additional step in the ageing process called “needling”.

Also, camembert, stilton, gorgonzola cheeses and a few others include mold in the process.

Yes.  I only saw that after I made my post.  I respect the fact that you admitted error.  And even more so because you admitted it before someone else pointed it out to you.  But, the way posting works, while one is writing a response, one does not see anything new that appears.  And that is why my post was written as if you had not done that.
