My chili turned out well. It needs salt, but I was very conservative with the salt as I've frequently added too much in the past. And the heat turned out nice. I was afraid it would be too tame. I only added a half teaspoon of cayenne pepper and five jalapenos. I think in hindsight, I prefer the canned tomatoes to the fresh. I used on-the-vine tomatoes, quartered. Maybe I'll try Roma tomatoes next time.

Rice mixed with peas and corn and soy sauce.

Been trying to eat more rice to get away from pasta.

Rice is just as starchy and loaded with carbs as pasta.

Made pork chops, stuffing, gravy, and Cajun style lima beans. I don't often, but I cleaned my plate. Husband said he really enjoyed it. So that's going into the supper rotation for a while.

Spinach and goat cheese quiche. I don't like spinach but goat cheese makes anything taste good.

I had a McDonald's McCrispy chicken sandwich. It was more McChewy than McCrispy.
