In the late 2nd century a non-Christian author described a religion that was perfectly acceptable to the Roman authorities whilst the founder was alive, but when he died it was taken over by a single individual who altered the sacred texts, wrote others of his own and made himself very wealthy.
 
Where atheists go wrong as far as the Bible is concerned is in believing that everybody involved in writing it believed in the literal truth of what they wrote. The people who wrote the Pentateuch didn't.

Scholars know when the Pentateuch was created and copied. 
It was not the "late 2nd Century". It was most likely created and copied in Alexandria in about 275 BCE. 
Scholars also know (archaeologists) when Judaism began to be widely practiced in the ancient Near East.
