I was a huge fan of Star Control back when it was new. Some people decided that they needed to fuse the best parts of the PC game with the best parts of the console version and remix the songs and sound effects. They did this with Star Control 2 only because the first one was too simple and the third one greatly diverged from the spirit of the first two.

Not technically opensource but is free, but no matter how many games I play I almost always come back to Urban Terror, a quake3 mod that has been tweaked over the years. It's getting a new HD remake released soon-ish which promises to be just as good.
It has windows versions, but it runs best on linux. http://www.urbanterror.info/home/ Bit like counterstrike, only at a faster pace, with wall jumps and powerslides.. all great fun with some excellent maps.
