I've heard this before, and in some ways it makes sense, but how is that not a self refuting statement? Aren't you effectively saying that "you know that you can't know anything"?

No. I said I argue that, not that I know it to be true. It is a belief, just as everything else is a belief. I can back it up with logical evidence though, which is why I believe it to be true. By the argument itself though, I do not know whether my argument is true or not.

To think of it another way, it is perfectly possible for one of my beliefs to be absolutely true. However, given that I am a fallible being, I have no way of knowing whether any of my beliefs are absolutely true.

I don't believe that, but I suppose one could be uncertain in their belief of uncertainty (but would that prove they were uncertain of everything? What if they became aware of that fact and became certain they were uncertain? I'm not even going to try to sort that one out...)

Which is to say, my father is not Catholic because he was brow-beat into it by his family, he is a devout Catholic because he used his intelligence to look into it and determined that the Catholic Church's claim to be the One True Faith are true.

In 1604 - the Catholic Church Burned Giordano Bruno at the stake for saying that the Sun was a star - the earth orbited the sun - and the earth rotated on its AXIS - and other things that turned out to be true as well.

That same church convicted Galileo of heresy for similar "beliefs" as well as others.

ANY educated person who claims that the catholic church represents the one true faith - in the light of the above - is simply not thinking
