Why atheism cannot escape absolute truth

Yet I heard many times from different Atheists here that God must be falsifiable as opposed to being impossible to disprove to be the truth.

I've not seen this as of yet. My point is, you can't prove a negative. Absence is by it's nature not there. Hence you can't prove absence. You can only go with probability. God, for me, is on the same lines as fairies or the Loch Ness monster or Zeus or Odin. They're absent, so it's a fair assumption they're not existing.
