Let me see if I understand this logic:

Because a child is generally better off with their biological parents, and because the biological parents will be a man and a woman, that means the replacement parents should also be a man and a woman, even though they no longer possess the crucial quality of actually being the biological parents.

Or the alternative: never take a child away from its biological parents, because "in general" it's better off there. Still doesn't work for children whose parents fall ill or die and literally can't care for their children.
