The "Orthodox" Christian interpretation of story makes no sense, I agree. However if you interpret the story different as it originally meant to the first readers of it, then it makes sense. The Garden of Eden story has the same meaning roughly as the Prometheus stealing Fire from the Gods did in Greek mythology.
If you use that interpretation, then the gods (including Yahweh) were afraid of Adam and Eve eating the forbidden fruit that would make them as powerful and immortal as they (the gods) were.
