Quite a lot of Christian theologians define evil as acting in a way contrary to the will of God. While a pretty tenuous position in itself (but that's another topic), it does seem to equate 'evil' with 'sin'.
If anything qualifies as a sin in the Christian worldview, disobedience to God certainly does. Since no sin can conceivably be a 'good' act, and since evil is the antithesis of good, then by sinning through disobedience, Adam committed an evil act. QED.
