Quite a lot of Christian theologians define evil as acting in a way contrary to the will of God. While a pretty tenuous position in itself (but that's another topic), it does seem to equate 'evil' with 'sin'.
If anything qualifies as a sin in the Christian worldview, disobedience to God certainly does. Since no sin can conceivably be a 'good' act, and since evil is the antithesis of good, then by sinning through disobedience, Adam committed an evil act. QED.

I might believe that Adams disobedience was the worst thing that's ever happened to mankind but, Adam knew not evil, so he could not have committed evil. This is the whole idea behind what happened as far as this argument goes. I agree some sin is evil, the Bible says so, however not all sin is evil. For example, if I kill my boss without reason I've done evil, if I disobey my boss I've committed a wrong. Yes it could be argued that all sin is evil but, I personally do not believe so from my studies of the Bible.
