For as much as I rave about it, I can't believe I haven't posted any of the music from Xenogears.  Its composer is Yasunori Mitsuda, also known for the Chrono Trigger and Chrono Cross soundtracks:

I believe it is one of the best PS1 era soundtracks.  Every song is great, and really enhances what's going on in-game.
