Well the MCU is doing way too good to need any reboots in the foreseeable future (although I wouldn't doubt some kind of soft reboot after Infinity War is over so they can justify recasting most of the roles of people whose contracts have expired) but yeah, I feel that way about other things like Spider-Man, and especially the Fantastic Four.
I think most of the origin stories in the MCU have been done very well, and even the reintroduction of Spider-Man didn't involve rehashing his origin, which is probably the best move they could have made to avoid having every viewer roll their eyes.
