Most ceramic/porslin tile are offered in a gloss and a mat finish. Natural stone can be honed so that the gloss finish is roughed slightly.
Unless you have some sort of motor coordination problem, bad balance, ect a mat finish is about all you need and you will see that in about 75% of residential buildings.
If you want to use hardwood, I would look into an engineered plywood floor with a real wood laminate. I have also seen some exotic hardwoods like epay used in bathrooms. If you have small children or you commonly get water all over the bathroom floor this may not be the best option for you.
