You want dry? My mom made meat loaf in an iron skillet, once. We stopped by on the way home from camping, and hadn't had dinner (got stuck in crazy slow traffic). My mom pulled this meat loaf that was black on the edges out of the fridge. She announced that "she liked the crunchy parts". Warmed it up, along with gravy and some other things, and we had some dinner. My wife despises gravy, so I never get that at home; but she soaked that meat loaf in it to soften it up.
For that matter, the cafeteria where I used to work had dry meat loaf like V's mom's. I haven't eaten meat loaf in decades.
