I think "close enough" is as close as it's likely to get. Like you say, though, that;s as close as it needs to get. We don;t mind paying extra for improved products..we understand that these improvements can have associated costs.
I'd eat it, if it tasted better than meat or I couldn't get meat up to my standards (pointless in my case, I produce it to my standards to begin with). I already eat fishsticks and chicken nuggets and all beef patties™...lol, how far off from lab mystery substances can it really be?
