Carrot ginger soup. Saute some diced onion and about 5 chopped up carrots in some olive oil, add either powdered or fresh ginger to taste (we use fresh ginger juice), then simmer in veggie broth for about 20 minutes. Next, puree in a blender, then add ether a cup of coconut milk or half a cup of milk or halfnhalf. Dash of pepper, salt to taste if needed. There you go! Super easy veggie soup in about 30 or 40 minutes.
OR
Roast a small pumpkin or kurbis squash in the oven until tender, then add veggie or chicken stock, juice of one lemon, salt and pepper to taste. Puree in a blender. Can be made with or without milk/cream/coconut milk.
OR
Get a bag of dried split peas. Cook them according to the package, add some ham, carrot, onion, and/or celery if desired. SUPER easy healthy dinner.
These are some ways to eat/drink your veggies from a blender that are healthy AND taste good. Go into food with excitement and an open mind. You never know what you might enjoy!
