They might run a register, but that's about the extent of what they do.
One place I worked as a bus boy, the bussers had to do the hosting too. It was mainly so the host/manager could go get stoned in his office. Sounds like a raw deal, but when the manager "called you in to his office" you at least had the chance of getting high after he bitched you out.
