Should I leave the bacon wrapped around the steak while it's grilling? Should the marinating mixture be used to baste the steak on the grill, or can it be used as a dip when the steak is done?
Leave the bacon on during the cooking - venison has almost no fat content. Your steaks shouldn't be on the grill long enough to need basting, but I don't see why you couldn't if you really want to. I've never used this particular marinade as a dip, but it sounds like a good idea.
