They may be experts in their field, but that makes no difference in what I like or dislike, an expert in making vinagar may say "this is the best vinagar in the world" but that won't change the fact that I don't like vinagar!
I used to eat deep fried french fries with vinegar, salt and chinese soya sauce. Dunno why I stopped eating that with vinegar now. Taste Buds maybe different, idk.
