I think the simple answer is the material that composes the shell cleaves apart and will not go back together. There is no crosslinking possible much like a broken bone only without any substrate or mechanism to knit it back together.
I have seen videos of people uncooking eggs, that is some ridiculous shit but possible. The protein crosslinking that occurs during cooking CAN be reversed!
