It's not because Rey isn't Ron, it's because Rey isn't challenged, that's what makes her boring. Because we don't know her core motivations we don't know why she does what she does. Rey isn't just overpowered right from the get go but she also lacks a sense of who she is or "what her place is in all of this" which I think is a fairly bad character trait for your main hero. Whenever Rey gets criticized those who want to defend her play the "its kuz sheeess a girllll" card.
If you watch episodes 4-6 you'll see that Luke has to go through so much more in order to become a Jedi, and even then he is never able to best Darth Vader in a duel. Luke helplessly watches his master die, trains under Yoda, and leaves Dagobah early, because he has a heroic flaw that makes him want to protect his friends even though he isn't ready to face the evil empire yet. Luke is defeated by his father, loses his hand and has to escape his abusive dad and get rescued by his friends.
In the final act he is only able to overcome his father by appealing to his humanity, showing us that even the most evil person can be persuaded to do good and that Darth Vader was really just obeying the real villain out of fear. It shows us just how evil someone can become when they allow fear to control their actions. Once Darth Vader overcomes his fear of the evil emperor, he throws him off of a balcony, which symbolizes that often times our fears aren't as real as we may think and that we always have a choice to do good. Luke learned how to use the force and his lightsaber to overcome minor obstacles throughout the series, but he was never able to defeat his father because his father was never his true enemy.
