The point of the fable seems to be that the Hebrews were better than the neighbouring pagans because their god doesn’t sacrifice children.

No. The point of the fable is blind obedience is expected. You're expected to trust this god and do whatever he asks even if it's child sacrifice. Even if the kid is your own.
Like I SAID Abraham didn't expect to be stopped. His example is held up as one to be followed, having so much faith he was willing to kill a child for his god.
