Most of us try to live up to what our conscience seems to suggest, most of us miss the mark often -even if only slightly-. Nothing new there.
If you have ethical reasons for veganism, and you can't personally bring yourself the whole way, for whatever reason, then you are acting unethically -insofar as you have defined ethics-. Appealing to the hypocrisy of others in this particular instance is particularly confusing, as clearly "meat eaters" do not share your idea of what those ethics are or should be. Chances are that "meat eaters" are also trying to do what they believe is right, its simply that whether or not they eat chicken (or who provides the chicken) has no bearing on that particular subject by their definitions.
The values and ethics surrounding food are diverse, shared much less frequently than the subject of the same.
