Decomposing plant matter also produces methane -which, case in point, is where the methane the cows and pigs are "producing" comes from (in truth they're processing, not producing). Given that the portion of the plant that you consume is usually less than 10% (and not so for livestock, they eat root shoot seed and flower) the methane is a byproduct of either, and less wasteful when the animal is fed plant matter than when human beings are. Ammonia is a potent and valuable source of ammonium nitrite and nitrate, ala nitrogen, the largest nutrient requirement for commercial agricultural production (and of course, the largest contributor -aside from oil- to much of the damage cause by agriculture due to toxicity in some cases, and blooms or other effects in others). It's also the basis of the nitrogen cycle -a cycle which early all life on earth depends upon-. Thankfully, we are better at extracting this nitrogen than the cycles of nature can hope to be, and so our processed fertilizers go farther with less (as opposed to dumping manure, filled with piss, that's why bull manure is worthless -his dangle points away from his pooper- on our crops).
