Thankfully we don't have to (abandon our combines, our slaughter houses, our semi-trucks and all the things that allow the world to eat). They just need to be modifed. This runs counter to a vast amount of industry interests (by and large, those industries have very successfully managed to make their interests our interests), and so we find ourselves in a situation where unscrupulous individuals play both sides against the center. The NOP is not a suitable solution, but neither is factory farming. Cows aren't screwing us ten ways to sunday (despite their being in the limelight after a few fossil fuel industry funded "reports") but battery livestock isn't doing us any favors either.
I'm with you on this, in a way. I'm all for reducing our impact as far as possible, but I don't believe in the free-ride, where man exists seamlessly and perfectly in balance with nature (as if the perfect balance of nature were some goal we'd actually want to achieve in the first place). We could already do much better than we do, not by some innovative and here-to-fore unseen technology -we already have the tools-. That's what makes it so frustrating.
