The Muslim world is dominated by a honor and shame culture, which leads to things like this and honor killings among other things. When other people either attack or make fun of say their god Allah or the Prophet Muhammad, these people feel that the honor is Islam has been tarnished and needs to be redeemed.
Mind you there used to be a time when Christians reacted in quite a similar way, when they thought their religion was being attacked. While they still do get deeply offended, they have come to the conclusion that reacting in the same those Muslims have done recently is not terribly productive.
