An enzyme that eases digestion of gluten is present in saliva and coded by genetics disproportionately to the amount of us that consume products that contain gluten (because of their ease of culture). Much like the ability to adequately digest dairy, it is a fairly recent adaptation. Same with legumes btw - which none of us are quite adapted to yet - despite consuming them en masse.
On the subject of stopping super-plagues, there are no known pathogens that can survive a fairly light mixture of bleach and vinegar in suspension. Simple, but effective. The chemistry of life (and common ancestry thereof) means that some things are universally effective - so far as we know-. On the same token, it's fairly difficult to apply bleach and vinegar to a human being that is already teeming with any given pathogen (since we're just as weak to the solution), so.....there's always that.
