You don't have to understand, but you have to respect the fact that there are people who's brain is not the same as their biological gender.
At least Violet tries to establish a reasonable basis for that usage, rather than just issuing a proclamation.
Also note that I sometimes do use female references to them just out of politeness. Sometimes I don't. Depends on the context.
