That's how the probability is to actually be measured.
Evolution is extremely likely to be true, due to it's extremely high quantity and quality of evidence. If it lacked evidence it wouldn't be so probable that it is true, just as God isn't so probable because, as far as I know, he completely lacks evidence.
And the more complex a belief the more evidence is required. And more gods=more complex than just the one god, even if one alone is still extremely complex. Hence it requires more evidence for more than one, so without any evidence, it lacks even more evidence because it demands more evidence, and by that rational evidential judgement - is more improbable than 'just' the one god.
