No, we don't need evidence to believe in something. We need evidence to know it's true.
We cannot just go out on a limb and say that when we find a twenty dollar bill it's the work of God. No, we rationalize and think. Maybe somebody dropped it? Was it that guy in front of you? Perhaps it's been here this whole time? I do not believe in something unless there's evidence for it, or else I just keep pondering whether or not it's true.
No, I have not walked on the moon. But you cannot walk on the Moon, first of all. You must skip. We have proof of this because of many, many videos. Not to mention the prisms put up on the Moon by... I forgot what mission it was... building them on the Moon.
And, no, we can't. Evolution is a hundreds of thousands of years process. We cannot root back to about 150 years and find changes in animal DNA; that's about the only time they decided to record anything in history. So we have to wait a long, long, long time until we can say for sure that evolution exists.

And, no. You're incorrect. If evolution is proven correct, idiotheists would still reject the idea and say that it's all wrong. Plus, there are plenty of people out there (including today's Pope) that believe God and evolution have a relationship with each other. In other words, they think that part of the Bible is wrong and that evolution is indeed true, as well as God.
