This is the exact opposite of the correct way to think about existential claims.
The correct method is to disbelieve a claim until it has been supported with sufficient demonstrable evidence and reasoned argument, not to believe it until it is disproved.
If you go about believing claims until they are disproved, this opens you up to having to believe in every unproved claim until it is disproved. But of course you don't do that, do you? I'll bet you only apply your "believe it until disproved" method to your god claim.

There is zero valid and sound logic that supports your contention that we are "still being created".
If you are admitting it is an unknown, why are you labeling it 'god'?
You'd believe if you just opened your heart" is a terrible argument for religion. It's basically saying, "If you bias yourself enough, you can convince yourself that this is true." If religion were true, people wouldn't need faith to believe it -- it would be supported by good evidence.
