There wouldn't be a problem if the employer had another job that they could give them. However they will be working on the checkout, and customers could be inconvenienced by this ultimately affecting the business.
I have no problem if you said "I won't apply to work on a checkout because I don't want to touch pork", but getting the job then forcing the employer to get someone else to do the task you have agreed to do in your contract is wrong.
The point is that anyone could refuse to do anything based on their religious beliefs, which they don't have to justify. There is no list of approved religions.
